Easy AF Smoothie Bowls

I love it when food tastes as bright as it looks, and few foods look as bright as pitaya. Also known as dragonfruit, pitaya always looks like she's ready for an 80's night themed party. Full of anti-oxidants, pitaya is my go to for smoothie bowls and the base for many of the dishes I have created for Beetnix Bar.
No one around here makes these bowls like I do. I miss the fuck out of them and every now and then, I remember I have a freezer full of #pitaya and I make one. Here is my favorite recipe:
1 Package of Pitaya Plus Unsweetened Pitaya
1/2 fresh banana
1/2 cup frozen mango (or strawberries, peaches... anything you like!)
1/2 frozen banana (for consistency)
Put in Vitamix and blend on high, using the tamper to get a smooth, thick, creamy consistency. If it won't blend, add tiny amounts of coconut milk until you get an ice cream like consistency.
Top it with whatever you want! Raw foods are endless and you can eat what you like. If you want to eat raw, stop overthinking that shit and just eat real food. You don't have to eat ingredients you don't like or can't pronounce. I like #ashwagandha too but you don't need that shit to eat like a badass. This one is topped with granola, the other half of the fresh banana, blueberries, coconut and Savannah Bee Company bee pollen and honey.

Smoothie bowls don't need to be intimidating. Just throw that shit in a blender, top it it with more delicious stuff, and suddenly you're a fucking genius. And don't worry. I am opening Beetnix Juice and Bowls on the Beltline soon, so there will be a great place in Atlanta for #smoothiebowls soon.
